I had a Lastec 3600 that had similar problems. We found that our radiator was the problem. Even though it looked fairly clean, there was a lot of dirt trapped in between the fins and the coils. We took it out and sent to radiator shop for them to boil it out and get all the junk out of the inside of the radiator and outside and straighten all the fins. After this, we found that we had to blow out our radiator with air everyday and washed radiator at least once a week.
When you try to restart machine after the 2 hour period, does it crank over easily or does it sound labored and hard to turn over? If hard to turn over, this could be from overheating issue possibly from dirty radiator or failing thermostat (do not count on temp light on these machines, have had a couple Lastec zero turns and lights normally only work about 2 years). If engine is easy to turn over, don't know how many hours your machine has, but consider doing a compression test on each cylinder. I just had a Deere 2030 Pro Gator with a Yanmar engine that had very similar issues and found I had 1 cylinder a lot less compression than other 2, and would not restart until motor cooled down. I rebuilt motor and now no problems.
